One Day till the BIG DAY!

Hello all!  I cannot tell you how much Ive missed writing blog posts and answering comments!  These last few weeks have been hectic for me, and this last week even more so!  For those of you who dont know, Im getting married tomorrow :)

Today will be filled with putting together flower arrangements, getting mani/pedis, the rehearsal dinner, and practice our awesome first dance (which is partially a surprise/secret).  I will post a video of our dance after this weekend so you all can see what Im talkin bout!

I wanted to let all my readers know about my big plans for the blog once my life settles back into a normal state lol.  I am coming up on the one year anniversary of Amys Nutritarian Kitchen and for it I am going to be doing some redesigns of not only the visual site, but of the posts and topics I include.  To start off I would like to do a Q&A post answering questions from readers.  Please feel free to ask me any question you can think of about a nutritarian lifestyle, my background with food and health, questions about me (not too personal of course), or anything you might think of!

COD WITH OLIVES CAPERS TOMATOES

I have mentioned in previous posts that I follow the 5:2 diet / the fast diet - it is the first time I have ever managed to stick to an eating plan which makes it impressive as I have been on a diet on and off since I was a 10 years old! My family used to very kindly tell me it was "puppy fat"!

Thankfully my daughter has a completely different body type to me (tall and skinny) but still I do not like to talk about diets, calories or fat in the house so when I have a fast day (500 calories) I need to be very careful about it. 

Last night I cooked this fish dish for myself but for my daughter I topped the fish with pesto and she had the olives and tomatoes on the side (she is not a fan of capers). It took about 15 minutes maximum and was very simple.

Ingredients for 2 people:

200g green beans
2 pieces of skinless cod or haddock (around 300g)
Olive oil or fry light 
1 tsp rosemary, chopped
30g green olives, pitted and quartered
2 tsp capers
8 cherry tomatoes, diced
Half a lemon, juiced



Preheat the grill and season the fish. Cook according to the instructions - mine took 12 minutes under a medium grill.


Prepare the tomatoes, capers, rosemary and olives.


About 5 minutes before the fish is ready, boil the green beans and then drain.


Then either spray some fry light (or if you are not counting calories add a tablespoon of olive oil) into a frying pan and add the olives, rosemary, tomatoes and capers for a couple of minutes. Season.


Squeeze in the lemon juice and let it bubble for a minute.


Then serve with the fish sitting on the beans and spoon over the sauce.


Such a pretty plate….and it was extremely fresh and tasty too. Very surprising as it is only 185 calories. I think the capers were the secret ingredient, they go so well with fish. Next time I might add some extra vegetables like peas and add some new potatoes for Arabella or Pascal although it is pretty perfect as it is!

SALTED CARAMEL CHOCOLATE POT

As you might know from previous blog posts, I am obsessed with salted caramel - it is my favourite - salted caramel cupcakes, salted caramel brownies, Haagen Dazs salted caramel ice cream, Green and Blacks salted caramel milk chocolate thins…..you get the picture!! Therefore when I saw a recipe for salted caramel chocolate pots in Olive magazine, I couldnt wait to make them. We had friends for supper on Saturday night and cooked roast pork belly and fennel gratin and so these made the perfect pudding.

They take 30 minutes to prepare, however you need to chill them in the fridge for a couple of hours at least and then take them out of the fridge an hour before you serve, in order for the chocolate to soften. I used glasses for the pudding however you could use kilner jars or ramekins instead….whatever you have round the house.

Ingredients for 4-6 people:

350ml double cream
2 tbsp caster sugar
200g 70% dark chocolate, chopped (I would use a combination of milk and dark next time)
50g unsalted butter, diced
100ml whole milk
creme fraiche to serve (I would use vanilla ice cream next time)

Caramel
200g caster sugar
100g butter
100ml double cream
1 tsp sea salt flakes



To make the caramel, heat 200g of caster sugar in a large, heavy based pan over a medium heat, until melted. I have never done this before and was so surprised that it actually worked!! It took about 10 minutes and I gave it a stir a few times towards the end.




Take off the heat.

I had a problem in that some of my sugar clumped together, I have no idea why! I looked it up on the Internet and if you also have this problem, add two tablespoons of tap water to the caramel, add it back to a low heat and stir to melt any lumps that have formed.

Take off the heat again and stir in the butter, cream and sea salt.





Pour into the base of the moulds, put to one side and chill. I used 4 glasses and I measured them on scales to make sure I divided the caramel evenly.




For the chocolate, heat the cream and sugar until it comes to the boil.




Take off the heat and whisk in the chocolate and butter.




Once its all mixed in, add the milk.




Allow to cool and then pour onto the caramel.





Put in the fridge for a few hours to set.

Remove from the fridge for an hour before serving to allow the chocolate to soften. Top with a spoonful of creme fraiche and serve.



These were good although not as great as I was expecting. As I mentioned in the ingredients list, I would use a combination of milk and dark chocolate to soften the taste next time and I would also replace the creme fraiche with vanilla ice cream. I think these little alterations would make all the difference and will make the pudding change from good to great.

Day 2 of Metamorphosis

I am not going to write every days progress and experiences, I promise, but today... Well, today was a bit of a surprise for me, so I thought it would be good to share it.

To be honest, considering I dont have that much weight to lose (if any at all), I have not and will not expect rapid declines in my weight (if I lose 5 kilos by the end of the program, thats gonna be great). Moreover, after all the food yesterday - all in total I ate like 1.7l of food (not counting the juice) - I was not thinking I was on diet anymore. In the evening before going to bed, I simply sighed and thought "Oh well, who cares if I dont lose weight, Im still within the normal range for my height" (163cm). So in the morning I simply step on the scales to record the weight of today, no expectations. And after I saw the weight, I had to step back off, look at it in wonder till the blinking number disappeared and just step back up... And again the electric scales show the same 55.7. Same time, same clothes (=no clothes), exactly 24 hours after the previous measure... 0.8kg off? nearly a kilo? 

I mean, I understand, it is not permanent, it is probably all the water and all... And tomorrow I will be back to my 56.5, but hey - I have NOT been under 56 in the past half a year!!! When my scales showed 56.0 were the  happy days. So, whatever it is, it is the first day in the past 6 months or so i actually went under 56, and I am happy about that. 

I walked quite dazed away from the scales, into the kitchen to prepare some Blueberry Applesauce for breakfast... I think I am still surprised, but, boy, it is encouraging. I started my workout like I have the last chance to dance in this life time :)

So, DC went OK, though as I was dancing like crazy, I got pretty tired after 15 minutes, so had to bring it down a notch. Then again jammed in the last 3 minutes or so. I still feel like a hippo a little, heavy and uncoordinated, but better than yday. Still cant follow all the arms motions, but Im trying. Some movements feel a bit weird, but I will get to it. I am not a very sweating type when I do sports (Im more like a face-reddening-type), but jeez I was sweating like hell.

MS killed me even more today. I guess because I was pumped from the scales revelations, so I was really into it. I switched legs today - doing left first, and right second. And I thought my left leg would fall off somewhere in the middle, and I would have to get to emergency... I was really struggling even with right leg (which is so obviously stronger) - exercises 3 and 4 are excruciating (funny but I know this word after reading Harry Potter). But went through it, slower than Tracy does (hence - less reps), but at least I did it  all, with only minor little breaks. I have to say, it was the first time in my life I was swearing in full voice... All the advice on how to deal with struggling (like trying to distract your mind by thinking of something pleasant, planning the day, planning what you would write later in the blog - that actually helped me, watch at the shadows on the wall....) - is weeeeell forgotten when you start to really struggle.

Result after two days: minus 0.8kg, I feel great, as if I am flying (I dont take drugs!), I feel lightness in my whole body, my back and shoulder muscles are extremely sore and glute muscles are aching to sit on. The feeling is welcome though and I cant wait to train them again tomorrow. I still feel my muscles awakened even much later after the training. Ah, good day (I even squeezed in laundry for the time I work out)!

PUY LENTIL SPINACH BLUE CHEESE SALAD

How beautiful was the weather today - it was boiling in London and so we thought it was the perfect day for our first barbecue of the year. We have simple tastes when it comes to grilling and so had cheese burgers and sausages but I wanted to make a different type of side dish to our usual green or potato salad. I found this lentil salad recipe in a waitrose magazine from last year - it was apparently inspired by Le Tour de France.

It took around 10 minutes to prepare and 30 minutes to cook.

Ingredients for 6 people (as a side dish):

250g puy lentils
3 tbsp olive oil
1 leek, sliced (I didnt have a leek and very much missed it)!
1 carrot, diced
1 celery stick, sliced
3 tbsp balsamic vinegar
1/2 x 25g pack of flat leave parsley, roughly chopped
100g bag baby spinach
Squeeze lemon juice (optional)
100g blue cheese (such as Stilton or Roquefort)


Cook the lentils according to the packet instructions. I put the lentils in a saucepan and covered them with three times their volume of vegetable stock (you could just use water). Bring to the boil and simmer for 20-25 minutes until the lentils are firm to the bite.



When they are ready drain and set aside.

Meanwhile, heat 2 tbsp olive oil in a large pan and fry the leek and the carrot over a medium heat for 10 minutes. As I mentioned earlier I didnt have a leek so had to just make do without.


Add the celery for a couple of minutes and then stir in the remaining olive oil and the balsamic vinegar.


Tip the drained lentils into the pan and mix together with the vegetables.


Remove from the heat and add the parsley and spinach, tossing together until the leaves have started to wilt.





Pour into a bowl / serving dish, season well and add a splash of lemon juice. Finally scatter with some blue cheese and serve warm or at room temperature.


This was very good although as I mentioned earlier I missed having a leek. Pascal adored this salad - it is definitely one of his favourites. I think you could easily mix it up a little - for example add some cherry tomatoes or pine nuts or whatever you have available. It would also go very nicely with some crusty bread and butter although I definitely enjoyed it with my cheese burger….you can never have enough cheese right?!

CHORIZO MAC AND CHEESE

Mac and cheese is my all time favourite dish - I could eat it every week (or every day)….although that probably wouldnt be the smartest decision health wise considering the amount of cheese I put in. However I do like to cook it every so often as a treat.

My favourite recipe is this mac and cheese with lardons, leeks and spinach although my daughter Arabella and I are quite a fan of the Kraft boxed mac and cheese although I dont think it contains much goodness :-) This is a new recipe I saw on Lorraines morning TV show - it is a completely different way to cook the dish and took about 50 minutes.

Ingredients for 4 people (big, healthy portions):

350g dried macaroni pasta
4 uncured chorizo sausage (or a flavour of your choice)
1 red onion, finely diced
2 garlic cloves, crushed
1 x 410g tin evaporated milk
80ml tomato ketchup
1 tsp English mustard
300g Cheddar cheese
1/2 a big pack of cheesy tortilla chips
Couple of drops of hot sauce (we didnt use)



Preheat the oven to 180 C / gas mark 4.

Boil the macaroni in salted boiling water according to the packets instructions - mine took 7 minutes and I cooked them al dente. Drain and then set aside.


Chop the onion, crush the garlic and remove the chorizo from its casing and then cut into bite size pieces. Fry in a dry pan for 3-4 minutes.




Add the onion and garlic and cook for a further five minutes until softened.




Add the evaporated milk, ketchup, mustard, 2/3 of the grated cheese and then stir until melted. 






Season and add the hot sauce if desired.

Stir in the pasta.




Pour into a baking dish.


Blitz up the tortilla chips until they resemble breadcrumbs - I scrunched them in the bag but you could use a food processor. Sprinkle over the pasta and then cover with cheese.




Bake in the oven for 30 minutes or until golden. Leave to stand for 5 minutes before serving.




I have to admit I was pretty dubious about cooking mac and cheese with ketchup and evaporated milk but it actually really worked and the tortilla chips and cheese topping was amaze balls!! It was a little sweet - I think to enhance the flavour I would serve with a green salad next time. Arabella prefers this version to my one with leeks and spinach….although that is not surprising for a kid….my husband Pascal shocked me by loving this too even though he hates ketchup and milk. We will definitely be cooking this again - it was quick and simple and cheap as well.
